Coconuts that are young contain water as well as spoon-meat, a thin layer of jellylike flesh that can be eaten with a spoon.
Taste: Water and spoon-meat are slightly sweet.
How to eat: Have the vendor at the farmers market open one up for you. They’re cold and you’ll get a straw. Once you’ve drank all the water, return and they’ll crack it open and make a “spoon” so you can eat the meat.
Selecting: Mature coconuts have a dull thud when you slap your hand against it. Young coconuts sound kind of bouncy, with a slight echo.\
